Thai Kaffir Lime Blueberry Popsicles

INGREDIENTS

3 cups blueberries
1 tbsp Kaffir Lime Powder
2 lemongrass stalks, choppe
1 can full fat coconut milk
2 inches ginger, coarsely chopped
1/2 cup honey, agave or sugar

 

DIRECTIONS

  1. In saucepan, combine blueberries with lemongrass and Kaffir Lime Powder. Simmer, about 15 minutes and allow to cool. Discard the lemongrass and Kaffir Lime Powder leaves and add to blender.
  2. In saucepan again, gently simmer coconut milk, honey and ginger, about 30 minutes. Remove ginger.
  3. Add flavors to molds, alternating between 2 flavors.
  4. Freeze, at least 3-4 hours. Serve & enjoy!
