Thai Kaffir Lime Blueberry Popsicles

Servings: 10

INGREDIENTS

3 cups blueberries
1 tbsp RawSpiceBar's Kaffir Lime Powder 
2 lemongrass stalks, chopped 
1 can full-fat coconut milk
2 inches ginger, coarsely chopped
1/2 cup honey, agave, or sugar 

DIRECTIONS

  1. In a saucepan, combine the blueberries with the lemongrass and RawSpiceBar's Kaffir Lime Powder. Simmer, about 15 minutes and allow to cool. Discard the lemongrass leaves and add to blender.
  2. In another saucepan, gently simmer the coconut milk, honey, and ginger, about 30 minutes. Remove ginger.
  3. Add flavors to molds, alternating between the two flavors.
  4. Freeze at least 3-4 hours. Serve & enjoy!
