3 cups blueberries
1 tbsp Kaffir Lime Powder
2 lemongrass stalks, choppe
1 can full fat coconut milk
2 inches ginger, coarsely chopped
1/2 cup honey, agave or sugar
- In saucepan, combine blueberries with lemongrass and Kaffir Lime Powder. Simmer, about 15 minutes and allow to cool. Discard the lemongrass and Kaffir Lime Powder leaves and add to blender.
- In saucepan again, gently simmer coconut milk, honey and ginger, about 30 minutes. Remove ginger.
- Add flavors to molds, alternating between 2 flavors.
- Freeze, at least 3-4 hours. Serve & enjoy!
